Gluten-Free Baking Success!!!

We had some soon to be over-ripe strawberries and bananas that needed to be used up. We pondered about what we could make when I happened to stumble upon one of my gluten-free websites(Karina's Kitchen). The recipe of the month was "Vegan Strawberry-Banana Muffins". How perfect is that??? I knew it was destiny's was of telling me it was time I try out one of these gluten-free baking recipes. I was a little nervous working with different kinds of flours as wheat-free alternatives. My experiment turned out to be a total success!!! These muffins are delicious! I took them to one of the studios I work at and everyone loved them! One of the clients even said he would buy them from me if I made them to sell. I got the seal of approval from Haws and I knew they were good :)

Ripe Strawberries were the inspiration.
The recipe made 21 muffins and I only used 1/2 c. of organic brown sugar, making these low in sugar as well. The fruit gives it all the sweetness it needs.
Adding the fruit makes these so pretty!

Yummy AND nutritious! Who knew gluten-free could taste so good. Did I mention they are also dairy-free? Anyone could love these muffins :)

Hit me with your best shot!

Yeah... I am a little behind here, but a few weeks ago, Haws and I went out with Kelly and Stan to do some target shooting at the indoor shooting range in HB. We were first surprised to see a friend of ours from church working the front desk. If we knew he was going to be there, we may have been able to get some better guns ahead of time. I was also surprised to see the young "kids" in there shooting. You would think there would be a strict age limit, but I never saw anything about it. Kind of scary.
Stan had his gun that he uses for work, which was a lot heavier and more powerful than the ones we borrowed from Haws' dad (yes... the man owned a business in Compton, so a gun was kind of necessary). I was not a very good shooter, but it was a fun night out and I felt like it was a learning experience. I learned that I should never try to shoot anyone with a gun.
Kelly and I showing off our real weapons... don't mess with girls in goggles!

No... that is not a little boy. That is me with me new short hair cut.
Look Mom... I hit the target!!! 3 times!!!
Haws' looking good from behind :) He was a much better shot than me.

Got one right in the red.

Haws' Adventure

After leaving me for a week to go to Havasupi for scout camp... Haws returned home safely with only a few battle scars. I thought I would get caught up on my blogging... but it turned out I was too busy having fun while "the cat was away" :)
Haws had a great time bonding with the guys. He came home with some fun stories and took some amazing pictures. I was actually a little jealous when I saw the waterfalls and cliffs that they jumped from. I am glad he had the chance to go and I know the kids loved him. When we got back they couldn't stop telling me how much fun my husband was. As if I didn't know that.
Here are some pics from the trip that I thought were awesome. Since I am the poster here... I don't have much narration to go along with it, so enjoy the shots!

Haws and Baker spent over 10 hours in the car together and built quite the "bromance".

A weeks+ beard growth

This is what came the day after he came back. Why must he torture me this way? I can handle the beard. There is something hot about the "Seven Brides for Seven Brothers" look... but the 70's porn stache is something I just can't handle!! Luckily this only lasted for one day.

Dana's Shower #2

Dana's second shower was hosted by The Bendheim girls, the Clawson girls, the Davis girls and myself. Debra decorated the house beautifully and this is the shower that I made the hit White Chocolate Mousse Pie with Joshua. All the girls chipped in to make the day special for Dana and we had a lot of fun!
Joshua somehow always finds his way into the action. The party girls
This is the gift from Kori and myself. Isn't it cute? I thought Chase would like it too :)

Dana's Shower #1

The "ward ladies" came together to through an awesome shower for Dana at Marsha's home. Of course it was beautiful!!! The house was decorated with tons of flowers and their was quite the food spread. Not to mention a candy station... which Chelcie and Dana took very good care of :) Some of the women who made it happen...The Davis Ladies
Dana was showered with love and many gifts. I was shocked to see how many gifts we both registered for. Kind of fun to know we have matching home goods.

FOUND FILE

While I was searching for the missing pictures on our computer (which is Haws' laptop). I came across some of Haws' old files. Now some people might be worried about what they might find on their husbands computer... but not me. This was the one thing I found that had me in stitches. It is Haws' graduation announcement from BYU. Check out that photo!!! I love how he looks like he is glowing and the look on his face radiates the confidence of a BYU grad. Now my big question is "was this a joke or did he really send this out to all your family and friends?" Knowing Haws... I almost think it was some sort of a joke, but since I will not be able to talk to him for a whole week(no cell phone reception in Havasupai) , I will have to wait to get my answer. I did not realize that I would not be able to talk to him while he was gone. I thought I would be OK having him gone for a week, but knowing I will not being able to at least talk to him makes me miss him.
Can you blame me???

The reason I have been blog slacking...

My "little" sister Dana married Chase (Trevor) on May 30th. I have been so busy with all the wedding festivities that I have been yet to post any pictures from them.
One of the things I have planned to do this week while Haws is away to scout camp (for a whole week!!!) is to post all about the wedding and the trip we took to New Mexico for the reception Chase's family had out there. So stay tuned... I hope I find the pictures that seem to have disappeared from my computer.
