Lemon Cookies



Haws and I went to Tae and Dana's last night for a little BBQ, get together. It was a fun night and unfortunately I didn't bring my camera to document any of the festivities. There was a lot of prego talk considering Liz (and Derek) and Dede (and Andy) are both due to have their first babies mid-late February. We are so excited for all of them!!!
Haws made our friend's lemon cookies and I promised to post the recipe here for everyone to enjoy. These were really a hit! Thanks Kirsten :)





Ingredients:
1 (18.25 ounce) package lemon cake mix (Betty Crocker-Super Moist)
1/2 c. cool whip, thawed
1 egg, beaten and mixed with 2 teaspoon lemon extract and then added to dough
3 tablespoons vegetable oil
1 cup confectioners' sugar for decoration

DIRECTIONS
Preheat oven to 350 degrees F.
Pour cake mix into a large bowl. Stir in cool whip, egg and lemon extract mixture, and oil until well blended. Drop tablespoonfuls of dough into a bowl of confectioners' sugar. Roll them around until they're lightly covered. Once sugared, put them on an ungreased cookie sheet.
Bake for 13 minutes in the preheated oven. The bottoms will be light brown, and the insides chewy.
