This was delicious! I got the recipe from Womens Health Magazine and made a few modifications of course :)
Makes 4 servings Prep 10 min Bake at 400 for 1 hour
1 lb small white potatoes, cut into quarters
1 large red bell pepper cut into strips
1/2 med onion
1 tsp salt
1/2 tsp pepper
1 tsp crushed garlic
4 halibut fillets, about 5 oz each
1 can of artichoke hearts (trader joes)
1/2 c. cherry tomatoes cut in half
1/2 lemon
1 tsp Italian Seasoning
1. Heat oven to 400, spray a 2 quart casserole dish. Spread potatoes, onion and bell pepper in dish with half of salt and pepper. Bake at 400 for 35 min stirring occasionally until potatoes are tender.
2. Mix garlic into vegetables. Season fish with remaining salt and pepper and place on top of veggies. Distribute artichokes and tomatoes over casserole and squeeze lemon over fish. Sprinkle with Italian seasoning.
3. Bake at 400 for 25 min or until fish flakes easily when tested with a fork.
