Vegetable Shepherd's Pie

This year I decided to sign up to take a Practical Nutrtion Class through Golden West Community Services. It was really interesting and confirmed a lot of the things I have been learning about through my own studying. It was only 3 classes and I would recommend it to anyone intersted.
For our final project, we all had to make a dish that followed certain nutritional guidlines. I made a vegetarian Spepherd's pie. And although I would prefer it with some meat in there, this was really good!
I got the recipe from Karina's kitchen and tweaked it a little. Here is what I did.

For the mashed potato crust:
1 large white potatoes and two large sweet potatoes, peeled, cut up
Chicken broth, as needed
Vegan buttery spread, to taste
Sea salt and fresh ground pepper, to taste
Chopped fresh chives, to taste
For the filling:
1-2 tablespoons extra virgin olive oil
1-2 teaspoons cumin or curry spice
4-5 cloves garlic, minced
1 1/2 cups cauliflower florets (about half a smallish head), cut to bite size
3 medium-large carrots, peeled and sliced into coins
1 zucchini squash, sliced and cut into quarter moons
1 yellow summer squash, sliced, cut into quarter moons
1 heaping cup shredded cabbage or slaw mix
1 14-oz. can Muir Glen Organic Diced Tomatoes with Green Chiles, with juice
1 cup chicken broth
1 tablespoon Worcestshire sauce and balsamic vinegar
1-2 tablespoons organic all fruit apricot jam, to taste- to balance the heat
1 tablespoon rubbed sage
Hot red pepper chile flakes, to taste (or use hot pepper sauce)
Sea salt and fresh ground pepper, to taste
1 14-oz. can butter beans, drained and set aside

Place the cut potatoes in a large pot and cover with salted cold water; bring to a boil and simmer until the potatoes are fork tender, about twenty minutes.

In the meantime, heat the olive oil in a large deep skillet and add the cumin or curry, and garlic. Stir one minute and add the fresh chopped vegetables. Stir and cook about five minutes or so.

Add the canned diced tomatoes with green chile, broth,Worchestshire sauce and balsamic vinegar, apricot jam, sage, pepper flakes, sea salt and pepper, and stir to combine.

Bring to a simmer and cook until the sauce begins to reduce. You want the vegetables to be tender-crisp, not too done, and the sauce to be thickened and not too thin [if, by chance, you need a little more liquid to cook the veggies, add a splash more broth or water]. When this has been achieved, taste test the sauce for seasoning adjustments; then remove from heat, and gently add in the butter beans. Set aside.

Mash the cooked potatoes with a little liquid and Smart Balance or olive oil. Season with sea salt and pepper. Add chives if you like. Taste test. Don't add too much liquid or over-mix the potatoes or they'll get gluey. Gluey spuds = not so good.

Preheat the oven to 350 degrees F.

Assemble your pie:

Spoon the vegetables into a casserole dish. Top with mounds of mashed potato. I like to leave a few peaks (they get a bit golden). Sprinkle with chopped chives or parsley. Bake in a moderate oven for 35 to 40 minutes, until the pie is bubbling and heated through.

Serves 4 as a meal, 6 as a side dish.

Starting the Nursery

For Valentines Day, Haws and I celebrated the day before by going for massages, heading to the beach for Wahoo's, a walk and some Gellato and just enjoyed the last time we would be celebrating child free.
We also headed to Bergstroms for their weekend sale and got our crib and changing table. I am hoping to make it onto the Ellen show, but couldn't pass up the deal just in case I don't get on or the don't give away cribs this year. I was so happy to find out Haws had Monday off of work so he would be able to assemble it over the weekend :) I really do have the best husband around. I know I am a lucky girl.
This is the mobile I bought while registering with my girlfriends. It was the only one left and I just liked it so much that I had to buy it!
We had our parents (minus my dad because he was away on business) over for dinner on Valentines Day. I finally got to bust out my China! It was a fun night and I was glad they could come over. We will have to do it again when my dad can make it. We missed him.

This is my belly at 22 weeks. I think it has grown a lot since 22. It looks especially big when I am in clothes for some reason. I can feel the little guy move and it is awesome!!!

Babies first trip to the ER

And mama's second. I have only been to the ER once before for myself. That was when I was about 10 yrs old and getting my appendix out. So it has been a while.

WARNING: This is not for those with a weak stomach or those who hate TMI.

Yesterday I woke up feeling like crap! It has been almost 5 weeks since I have woken up with the nausea and I have only had one vomitting experience in the last 5 weeks, so this feeling was a surprise to me. I pretty much think it was due to the sugar hang over I had from Super Bowl. I will never eat like that again! My body is just not use to it and I think little James does not like sugar. Anyway... I wanted to document last nights events so I could remember what happened.
I came home from work and a walk yesterday afternoon still feeling a bit queezy when I lost everything that was in my stomach, along with lots of water! I usually feel better after that, but I didn't, so I laid down for a nap. After a few hours I forced myself to eat, but really couldn't do much of that, which is also abnormal for me, even when I am nauseous. Long story short, I continued to lose any food or fluid that went into my body. I got my classes covered for the night and remained on the couch until Haws got home. He then had our home teacher come over and they gave me a blessing. (Thanks Seth) I called the Dr. on call and she called me back. I talked to her for about 1 min and then started throwing up again, so Haws took the phone and she said to go to the ER.
SO we went to Hoag, which was an awesome experince and I am so glad we are having our baby there. They checked me in and I even got my own room in labor and delivery. No draped room with a million other sick people. I dry heaved once while I was in there, so they knew I was dehydrated. The Doc on call ended up being someone from the church and I knew his kids and grandkids! He was great and so was the nurse. I got an IV and medication to stop the nausea. The minute I got that IV I started feeling better. He said the dehydration probably caused the vicious cycle of vommitting. They took some blood tests and they all came back normal, so there was no virus, thank goodness!
The upside to the story is that while I was laying there with my IV drip, watching one of my favorite shows Castle, I felt the little guy move!!!! It felt like bubbles or tapping. He was probably wondering what the heck was going on. We also got to hear his heart beat and it sounded great, so that put some of my worry aside. Once I was done with the IV I was able to go home.
I am so glad everything was OK. Once I got that blessing, I knew it would be, but it was good I went to the hospital and got the fluids I needed and the reassurance that the little guy was OK :)

The Bump

The pic on the top is at 21 weeks and the pic on the bottom is from 13weeks!
Do I look whiter to you? Because my stomach hasn't seen the sun in ages.
This little guy is growing and people are finally able to tell I am pregnant. Someone even carried the bag of ice for me out of the grocery store! Little do they know how strong I still am :)
I finally stopped throwing up on a daily basis about 5 weeks ago and have only had one bout  since.
Thank goodness for Unisom! The second I stop taking it I am sick again.
I am loving being pregnant, even with the weird changes that start happening. I know my tune might change 4 months from now, but I am just so grateful to have this little guy growing inside of me and can't wait to have him join our family.

Turkey, Cheese and Potato Quiche

I made my mom's hash brown quiche for my friend Kelly's baby shower. I made a few tweeks to make it a little healthier :)

Ham (Turkey), Cheese and Potato Quiche

24 oz package of frozen shredded hash browns, thawed
1/4 c. melted butter
6 eggs
1 cup half and half
1 tsp Lawry's seasoned salt
3 c. small cubed ham or turkey ham
2 c. shredded cheddar cheese
1 c. Monterey Jack Cheese (or swiss cheese)

Mix hash browns and melted butter. Press into the bottom and up the sides of a 9x13 pan. Bake at 425 degrees for 25 min. Mix eggs, half and half, and salt. Mix ham (or turkey) and cheeses together and put on top of the cooked potatoes. Pour egg mixture over ham and cheese. Bake for 40 min.

Vegetable Minestrone with Buckwheat (or quinoa)

I had this recipe hanging on my fridge for about 2 months and finally was in the mood to make it! Nothing like a good down pour of rain to put you in the mood for soup :)
As always, I made some changes to the original recipe from Clean Eating. I wrote in the changes I made, but I am sure either way will be delicious!

Ingredients

I added Napa Cabbage and zuchinni to the veggies in the soup
2 tbsp extra virgin olive oil
2 medium carrots, peeled, cut into 1/2" dice (about 1 cup)1 1 cup fennel
    1 cup red onion, diced
2 lrg cloves garlic, finely chopped
2 bay leaves (I didn't use these, just used an italian herb blend instead of the herbs here)
2 tsp fresh thyme leaves, chopped (skipped)
1/4 tsp fennel seeds, crushed (skipped)
1 1/2 cups cooked cannellini beans (white kidney beans), rinsed and drained
2 cups fresh plum tomatoes, peeled, seeded, and diced ( I used canned organic tomatoes that had garlic and basil in them)
1/3 cup uncooked quinoa ( I actually didn't have quinoa and used buckwheat kernals instead. It will be good with either)
kosher salt and ground black pepper to taste
1 cup fresh spinach, cut chiffonade
    tbsp basil, thinly sliced
2 oz. Parmesan cheese, finely grated (abt 1/2 cup), optional

Directions

In a lrg heavy bottomed pot, heat oil over medium heat.
Add carrots, cabbage, onion, garlic, bay leaves, thyme and fennel seeds, and cook, stirring often, until vegetables are tender, about 8 minutes.
Add 6 cups water, beans, tomatoes and quinoa.
Heat to boiling then reduce heat to low and simmer until quinoa is tender, about 20 minutes.
Remove bay leaves and season with salt and pepper.
Stir spinach and basil into soup just before serving in bowls.
Garnish each with 1 tbsp cheese, if desired.
