Banana Chocolate Chip Cake

Inspired by a few over-ripe bananas, I went searching for a recipe for banana cake. A client of mine had made some last week and it looked delicious! So this is what I found that resembled what she made. I am going to have to get her recipe when I see her next and see if it is the same one. This is not Gluten Free... but this was a hit!


Banana Chocolate Chip Cake
Ingredients:
1 1/2 cups all-purpose flour
2/3 cup white sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup mashed bananas
1 egg
1/2 cup unsalted butter, melted
1/4 cup milk
3/4 cup semisweet chocolate chips

(I added about a tsp of cinnamon. Cinnamon makes everything better... just ask Tom :)

Directions:
1.
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.

In a large bowl, mix flour, sugar, baking powder and salt.

In a separate bowl, combine bananas, egg, melted butter and milk.
4.
Stir banana mixture into flour mixture until blended. Be careful not to over mix.
5.
Stir in chocolate chips.
6.
Pour batter into 9x13 inch pan. Bake at 350 degrees F (175 degrees C) 30 to 35 minutes, or until a toothpick inserted into center of cake comes out clean. (It will have some melted chocolate, but no crumbs.)
