I love using Spaghetti Squash in place of regular pasta, but I still wanting to add a grain that wasn't bread. Then I remembered loving porcupine meatballs my mom had made way back when. So I looked online, got a few ideas of how to make them and made these. They were yummy and perfect on the squash.
Ingredients
- 1 pound extra lean ground turkey Breast
- 2 cups cooked regular brown
- 1 egg
- 3/4 teaspoon dried oregano leaves, crushed
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground black pepper
- 1 Jar of Tomato Basil Spaghetti Sauce
Directions
- Thoroughly mix the turkey, rice, egg, oregano, garlic powder and black pepper in a large bowl. Shape the mixture firmly into 25 meatballs.
- Heat the sauce in a 12-inch skillet over medium heat. Add the meatballs and heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes or until the meatballs are cooked through.
And wallah! They were super easy to make.
Gotta add some Parmesan of course!
